Often breakfast is the best and most complicated meal to make. You must account for getting up early, prepping, having a bad morning, and feeling like cooking. So I have recently gotten into loving the Freezer bakes. You make something to put in the Freezer so you can take out just the amount you are going to eat and don't have to worry about cooking, just waiting. One of my favorites is the Oatmeal bake because it includes all the necessary vitamins. Also, all I have to do is put it in the oven, wait for the kitchen to smell good, and then eat.
Oatmeal Bake Recipe:
- 2 Cup Rolled Oats
- 1 Cup Instant Oats
- 2 Teaspoon Baking Powder
- 1 Tablespoon Cinnamon
- 1 Teaspoon Allspice
- 1/4 Teaspoon Salt
- 2 Flaxseed Eggs
- 1/4 Cup Mashed Banana
- 1 Stick of Butter
- 1 Cup Cashew Milk
- 1 Teaspoon Vanilla Extract
- 1 Cup Frozen Berries
- 1/2 Cup Maple Syrup
- 1 Cup Sliced Almonds
- 2 Tablespoons Honey
- Pre-Heat Oven to 350 F
- Grab Saucepan
- Add Butter and Frozen Berries to the pan.
- Constantly Mix and Hit until the butter is melted and there is not much juice left.
- Mix 2 Tablespoons of Flaxseed Meal in a small bowl and 6 Tablespoons of Water to make 2 Flaxseed Eggs. Make sure it has the egg consistency; if it is too watery, add more Flaxseed Meal; if it is too dry, add small amounts of water.
- Mix Oats, Baking Powder, Cinnamon, Allspice, Sliced Almonds, and Salt in a large bowl together.
- In another bowl, add Flaxseed Eggs, Mashed Bananas, Milk, Maple syrup, Honey, Butter & Berries together and mix.
- Then gently add wet ingredients to the dry ingredients bowl.
- Add mixture to buttered baking dish.
- Bake for 20 minutes or until the top is crisp.
- Take out the oven and cut into squares or sizes you will eat.
- Let cool
- When cool, wrap each individual in aluminum foil or parchment paper. Then put it in a freezer Ziploc bag. Label the bag and write the Expiration date 3 months from today.
- Put bags into the Freezer.
- When ready to eat, take one out of the Freezer and put it in the oven. It should take 10 minutes before you smell it and then eat.
I love grabbing these out of the Freezer and eating them. It takes a few minutes in the oven, and then boom, a filling breakfast.
